Meeting Minutes Folder

Is there a way to have subfolders within the Meeting Minutes folder - e.g. to have all the minutes for one year together in one folder, and another folder for the next year's Minutes? And then to move the documents into those subfolders. I would appreciate some feedback on this. Many thanks.
