Our club may be changing its name (voting next week), and we need to find out how we change our website name w/o losing any information. We like the naming convention of our club's website (based on your internal document, support.toastmastersclubs.org/doc/item/a...whats-the-difference ), and we're not looking to do a custom domain name. How do we rename our website and what information would Free Toast Host require? Thank you.

All you need to do is change the Alias, as in the documentation you've quoted.   You'll also need to change references to it, e.g. on Club Central.
If you have an alias you have 2 URLs, one with the club number, the other with the alias.
