We have an unofficial officer role of VP of Mentorship. We'd like that role to be included in the print templates for TM Layout and TM Layout-B&W

You can create any arbitrary role/agenda item you want in the agenda.   Just assign a person to that role in the template, then set the role as a non-signup role.  

In other words, you can accomplish this now with existing functionality.

Sorry I wasn't clear on that. What I meant is an officer for the left sidebar of the printed agenda template.

Thanks for the clarification.  I am not sure about this.  "Other Officer" can be any number of people, so I could be faced with listing 10 people listed as "Other Officer" in the sidebar.  There is only so much space for these things.  

I may be able to create a print option to toggle it on, then it would be your problem to make sure there are not too many "Other Officers".  ;-)

I would also like to hear from some other people as to whether this would benefit other clubs.  (the more the better)

Yes, but the system is not designed or updated to meet the needs of just your club (or any one club).  ;-)

Steve, we have a similar, yet different "Other Officer" inquiry.  During executive transition, (between the May elections and end of June), some roles with website access are essentially shared for training purposes. 

Being able to indentify an "Other Officer" and grant them various admin rights would work for everything to the incoming VP Ed learning about the agenda tools, the incoming VP Membership working through the member portal, to having an "assistant site admin".

Having an "Other Officer" role that can be assigned (and easily changed), would also allow temporary assignment of various access rights without removing them from any of the serving officers.
