Can't locate the Guest list to edit it. Checked some of the documentation but nothing jumped out. New member drive later this week.

Mike,

Guests are maintained under Membership Management.

Enter the guest information, then after saving, scroll down to Assign Officer, Guest, Former Member Status, select the guest from the drop down and select guest as a role.
