We are struggling with allowing members to sign up for roles on the agenda for the meetings and them receiving the emails. I understand the strike through concept when members are new. However, is it a way around this? We want the members to still be involved and receiving emails of the events that occur in our club. Please advise.

You need to educate your members on why they must click the accept link if they want to use the club website.

Privacy rules require any person whose information is put on your club website accept this by "Opting in" by clicking the link in the email from the server. Failure to do this will mean the information will be removed from the server after 30 days. There is NO way around this. People are responsible for the privacy of their information and must make that action for themselves.
