Sometimes when I send an email from our website, the sender's name is "Admin" and sometimes it's "Toastmasters Club 5940441 on behalf of Admin." How can I change the sender's name for all emails?

That is automated and depends on how you logged in when sending the email. If you want to be sure that you include your name, then make sure you are logged in as a member.
