Wanting some guidance or where to look on setting up analytics to identify where are our Unique hits coming from, and what are people doing on the website.

I'm a total novice on anything like this. I browsed the Google Analytics webpage, but I don't have the background to really know what I read there

Essentially, Google Analytics will provide a script to you that you insert in the provided field in the Admin Console. I believe that the script is specific to your website and GA account. The script basically communicates browsing information to Google Analytics.

So you need to find where in the Google Analytics website to get the script. Their site changes over time, so it is hard for us to say "go to that page and get the script". You are going to need to do some googling on Google Analytics to figure out where to get the script that you need to plug into the admin console.
