How to edit Meet our Members 2

Reusing this system again after a break of a couple of years.
How do I update the member roles. Trying to do this in member management, and even though I save after each change / refresh the screen, and it looks as if the changes have taken place, when I log back in, all the old settings have been restored. All I am trying to do is edit the role, not anybody's profile info.
How do I sort this out?

OK - so it seems to be the outgoing President. I get this when I try to make him IPP :
You have errors in your form below. Please scroll down and correct the following:
Invalid/Non-functioning E-mail:
The thing is - that email works - it's a local company - but it seems that your validation is blocking me from updating him to his new role. Which means the incoming President doesn't get registered ... We'll find a workaround, but a simple check is having unintended consequences ...

This says Meet Our Members - and I couldn't update our member list / their specific roles. So - in my mind - it's related (& yes - I am in IT myself - it all depends how narrowly you define a topic ...
)
Club #4125.
I corrected the role allocation - removed the email address from the outgoing President, changed his role to IPP, and was able to update the role of the incoming President.
But now I cannot add the IPP's email address back again - so if we use FTH for broadcast messages, he won't see them. The email is valid in South Africa / he & I are able to send emails back & forth.
Surely a warning message to check, with an option to override is more appropriate than a hard failure to update?
