I have access to the Admin Console, i can pretty much edit all the other pages except the Meet our Members page.

The Meet our Members page isn't directly editable. It's an aggregate of all member profiles that are set to "public".

If it's greyed out, then no profiles are set to public, and at least one person needs to do that before the page becomes active.
