I am not able to select meetings. I believe I am missing something in the setup. Or even signing up for a role. What did I do wrong?

Members cannot update past meetings only future meetings.
Only the VPEd and and Site Admin can change past meetings.

Your VPED or you as site admin have not loaded future meeting agenda.
If you want to work on agenda you need to log in s the site admin.

I am the administrator, and I just set up the agenda. Do you have to create a new agenda before every meeting? Is there something I am missing when it comes to creating a new agenda for the next meeting?

Yes you need to create a new dated agenda for every meeting. Most clubs create them months in advance.
Please read the agenda documentation on this site.
