Changing Member Speech Project

Members are forgetting to change their Path when signing up for a role. I discovered a member gave several speech projects but all assigned to the wrong path. Is there a way to change their path so it reflects the one they are working on? And is there a way to add an extra field to the member bio (could be hidden from public view) so their path is chosen (like an "active path" field)?

The site admin or VP Education can go back and change the agenda for the day and it will change in the report.
