Hi
If I update the incoming officers now, and then send an email to officers.... will it go to the current executive or the new?

It goes to whoever is currently listed as officers in the Membership Management module.

That is why we recommend in our officer changeover checklist to create a custom group (e.g. newofficers or formerofficers) for use during the transition.
